What are Living Foods? “Living Food” (a.k.a. Live-Food or Raw Food) is a dietary philosophy purporting that the most nutritious foods available to mankind are whole, natural, raw, organically-grown fruits and vegetables, nuts, seeds, and grains. There is much evidence suggesting that when food is cooked, naturally occurring enzymes that aide in digestion and food assimilation are destroyed. The digestive system must then work extra hard to break down foods that are cooked because of the missing enzymes. The cooking process also destroys vitamins, minerals, antioxidants and fiber, and it denatures the chemical structure of the food which leads to poor assimilation of the still-existing nutrients.
It is no wonder that today, as we continue to modernize the commercial food industry, our health is paying a major price in the form of diseases, increased cancer rates, and a whole host of health problems that didn’t exist a century ago! A diet that maximizes natural, living foods and minimizes meat, dairy, sugar, starches and other processed foods will provide unmatched vitality and health. Other benefits of including more live-foods in the diet are decreased environmental impact and reduction of animal cruelty. While Wesley enjoys preparing living foods tremendously, his passion is teaching others how to prepare these foods for themselves. Incorporating more living foods into the diet is easy and fun. Most of the recipes can be prepared with common kitchen equipment such as a blender and a food processor (although there are benefits to having other pieces of equipment such as a food dehydrator or a high-speed blender). Wesley advocates a well-balanced diet of about 75% organic live-foods and 25% cooked vegan foods, but he stresses that it is not his mission to 'convert' people to being vegan or even vegetarian. Wesley feels there is significant value in any amount of living food one is able to incorporate into their diet. He encourages people to go as far as they are willing to go to take claim of their health and make a difference in the world.
